It's Monday again.  And I have no voice.  And I am tired.  BUT, we did have a great weekend to show for it, so I will push through and hopefully get it together by my my third cup of coffee, or the end of the day...whichever comes first.

Meatless Meals - Veggie Soup

Ahhhh, Lent.  A time of sacrifice.  A time of prayer.  A time of remembering to fix meatless meals every Friday.  I will admit, I'm pretttty good at remembering, but not always 100%.  Last Friday I fixed this delicious Vegetable Soup and it got rave reviews from my whole fam...even the toddler!

Toddler Tips

Here are some of my favorite tips and tricks of the moment that are helping to keep me sane and my toddler engaged.  Happy parenting!

Toddler Tip #1 - Finger paint doubles as bath paint!  

If you already have finger paint around the house there is no need to buy the "specialized" bath paint.  We use finger paint on our tub almost every night and it washes off like a charm...actually, better than the bath paint!

"Super" Dip

I think parties are the perfect platform to try out a new recipe, especially if there are a.) lots of people and b.) lots of people you don't know.  I have found that when you are with a new crowd you can get a more honest representation of their thoughts on your recipe contribution.

Stuffed Peppers with a Twist

Confession - I love the flavor of stuffed peppers, I just can't stand the texture.  I feel like I never get the "pepper" part right and am always left thinking..."That was okay, but not spectacular."

Well my friends, if you are in my same boat, I have the answer.  It's all of the amazing flavors used in a traditional stuffed pepper recipe but deconstructed into casserole form.  Perfect-o!
