Hi everybody! Here’s what we have been up to over the past two weeks:
Last weekend we headed down to North Palm Beach for our annual trip to El Cox Casa. Our friend Jenny’s parents have a spectacular place near Juno Beach and welcome us year after year for a fun Labor Day getaway…this year Mr. Cox even surprised us with shirts!
This was the first year with the kiddos (Everett, 18 months and Carson, 6 months), and it proved to be just as much fun. We spent our long weekend relaxing, eating, drinking, kayaking, paddle boarding, swimming, beaching and watching football. It was such a nice little escape from reality and we (as always) can’t wait to go back! Thanks Captain and CC!!!
This past week/weekend we spent catching up. Catching up on sleeping, cleaning, grocery shopping…you know, the necessities. It was nice to have a weekend that we didn’t really do a whole lot. We did get a 7 mile run in on Saturday and then spent the rest of the day vegging out and watching a whole lot of college football.
This weekend we are back to being busy as we are heading up to celebrate my mom’s birthday in Palatka, while making a side trip to Gainesville to watch the Gators play with our friends Jill (UK alum) and Ryan. Then we are headed back early Sunday morning as we await the arrival of our Wisconsin family that will be in town visiting all next week. Fun times are ahead…if only the weather would cool down juuuuust a bit!
Here’s our plan – I hope you’re eating something yummy this week!
M: French Dip Pressed Sandwiches and Roasted Carrots
T: Steak Salad w/ Homemade Balsamic Vinaigrette
W: Tomato Pesto Pizza
Th: Pot Roast Baked Potatoes
F: Palatka
Sa: Palatka/Gainesville
Su: Egg Salad Sandwiches w/ Potato Chips
Have a great week!
