As I mentioned in yesterday’s post, we spent the weekend celebrating the first birthday of our friends’ daughter, Jayda. Here are the highlights:
There were fun decorations, LOTS OF FOOD, plenty of drinks (adult and kid friendly) as well as an adorable ladybug cake.
Jayda had a great time digging into her cake – which, by the end, looked a bit like a bad run in with lipstick!
Thank goodness the icing didn’t stain!

My contribution to the yummy spread was one of my favorites that I can’t believe I haven’t shared yet! Here is my lower-fat version of a crowd pleasing buffalo chicken dip that is perfectly creamy and not too spicy. Enjoy!
Buffalo Chicken Dip
2 (10 oz) cans chicken, drained
2 (8 oz) pkg. reduced fat cream cheese
1 C light Ranch (or Blue Cheese) dressing
3/4 C wing sauce (I use mild)
1 1/2 C shredded cheddar cheese
Heat chicken and hot sauce in skillet over medium heat, stir in cream cheese and ranch. Cook until warm. Mix in 1/2 of the cheddar cheese and transfer into slow cooker (or bake ware) to keep warm. Top with the remaining cheddar cheese and serve with chips of choice.
As for Jayda’s gift, I was so excited to make her a new Green Bay Packer tutu. I made one for her baby shower last year before she was born and she wore it for every Packer game last season. Since her original was a.) too small and b.) a bit raggedy, I figured it was time for a “big girl” tutu.
After reading over a few tutorials online I figured out how to make a much more time efficient and professional way to make them. Her new tutu is full of tulle and easily adjustable (I will post my own tutorial soon). Perfect for a growing little lady!

Not only did she love wearing it all day (Sunday) it also brought good luck – the Packers won in dramatic fashion! Go, Pack, Go!
