Since I have been on a major DIY kick lately, I am going to go ahead and add nut butters into that mix! After checking out a few magazines at the public library (LOVE that place!) yesterday I was browsing through a Rachael Ray Magazine and found what looked to be an easy DIY Almond Butter recipe.
They were right! So easy and yummy! I added my own spin and threw in a few shakes of cinnamon for some variation. If you like nuts and nut butters don’t hesitate - try it today!
Cinnamon Honey Almond Butter
Ingredients:
1 1/2 cups whole roasted almonds
1/2 teaspoon salt
2 tablespoons honey
1/2 t cinnamon
Directions:
Process nuts and salt in food processor until smooth, about 5-6 minutes, scraping down sides as necessary. Stir in honey. Store refrigerated.
Disclaimer: This almond butter is not super duper spreadable. I’m thinking if you let it go a few minutes more in the food processor or add a bit more honey it may be a little bit more pliable. I don’t mind the texture so I left it as is.
Another solution might be to microwave the desired amount for about 10 seconds before spreading.
Serve on top of any delicious muffins you have hanging around or as a fruit dipper.
I hope you have a great afternoon! I’m headed for a mid-day frozen yogurt date with my friend Kamrin…lots of catching up to do! Have a good one!
