To celebrate, I am happy to share one of my mom’s signature scuffin recipes (scone/muffin) with you all. From my mom’s kitchen to yours…enjoy!
Cranberry Orange Scuffins
2 C Self Rising Flour
1 C sour cream
1 stick of butter, melted
1 coffee scoop of sugar
1/4 C candied orange or lemon peel
1/2-3/4 C dried cranberries
zest of one orange
Preheat oven to 350 degrees. Roughly chop candied orange peel and dried cranberries. Add all ingredients to flour and stir. Batter will be thick. Scoop batter with large ice cream scoop into sprayed muffin tin.
Bake for 30 minutes.
If desired, glaze with powdered sugar and fresh lemon or orange juice when cool*.
*best when eating cooled
