Whew…what a day yesterday! Lots of cooking and laughing took place at our house. Here’s the recap:
For our Easter feast yesterday afternoon, we dined al fresco and enjoyed the beautiful Florida weather on the back porch.
Luckily the weather actually felt a little like spring, instead of the 90 degree heat we have been experiencing. It was perfect outside, and we definitely need to start giving our patio a little more love – it’s so pretty out there!
Mike manned the grill and took care of the marinated chicken breasts (bone-in) while mom and I took care of all of the side items inside.
I made the homemade applesauce and lemon cheesecake squares (which actually turned into triangles because of the mini scone pan I used) ahead of time. That way the only things that needed to be finished were the roasted carrots and broccoli mac n’ cheese.
I can’t wait to share the recipes (coming soon) – they were so easy and packed full of flavor. I am so excited about leftovers!
I originally planned to add in a strawberry spinach salad – one of my mom’s famous recipes – but truth be told, I forgot. I’m a bit glad I did however, because we had PLENTY of food and were stuffed after round 1.
The lemon cheesecake bites were light and fluffy, with just the right amount of creaminess. They weren’t totally guilt free, but much better than indulging in a whole piece.
Since it is my Spring Break (yay!) I am planning on getting quite a few things marked off of my to do list around the house. Mom and I have already planted some fresh spring flowers this morning. Check!
