One of my guilty pleasures on my days off is to watch the Today Show. I know, it doesn’t seem like a big deal, but I love not being rushed, watching morning shows and sitting down to a real breakfast. The simple things make me happy!
Breakfast this morning was an egg sandwich on a whole wheat bagel, small glass of Trop 50 OJ (reduced sugar) and a warm cup of half-caff coffee in my favorite mug.
On a fun note, we have such an exciting week scheduled! My brother-in-law and sister-in-law are coming in from Wisconsin later in the week and we are headed to the Daytona 500 on Sunday with J&J. I’m so excited!
Also, besides celebrating Mardi Gras tomorrow with Jambalaya (my first time making it), Wednesday also starts the season of Lent, which among many other things, means giving something up for 40 days and a lot more meatless meal recipes coming your way since meals on Fridays during Lent are traditionally eaten without meat.
