Green Goodness

 

Sometimes meatless mains can be boring, but definitely not this one!  Last night’s dish full of green goodness, was packed full of flavor and tasted like it was from a yummy Whole Foods salad bar. I loved it!

Most of the components were green (great for a St. Patrick’s Day meal), except for a few delicious mushrooms and a sprinkle of feta. 

This meatless pasta dish consisted of:  spinach cheese tortellini (pre packaged), sautéed balsamic mushrooms, roasted green beans, pesto and feta. 

I loved how easy it was, that it could be served warm or cold, as a main or side and was gourmet from the word go – such a fake out meal!

To assemble this meal: 

Preheat oven to 400 degrees.  Roast greens beans with olive oil and garlic salt.  While the beans are roasting, begin to sauté 1 package of baby portabella mushrooms cut into fourths.  Add some balsamic vinegar near the end of the cooking process.  Boil the water and cook the noodles according to package instructions.  When all the components are finished, combine in the mushroom sauté pan.  Add desired amount of pesto and mix.  Serve and top with Feta.
