Soup's On

Hi everybody!  Merry Christmas Eve Eve!  As we are packing and getting ready to head out for all of the festivities we have planned, I wanted to leave you with an easy, yummy and healthy Minestrone Soup recipe.  Mike gave it rave reviews last night and it is going to be our lunch in just a bit. 

This is yet another great meatless dish to add to your repertoire!  Enjoy!





Easy Minestrone

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced or pressed
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 cup fresh or frozen green beans
  • 2 (14 ounce) cans diced tomatoes (I used Garlic and Olive Oil for more flavor)
  • 5 cups vegetable or chicken broth
  • 1 (14 ounce) can cannellini beans, rinsed and drained
  • 1 cup small pasta (I used ditalini)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Parmesan cheese-optional, for garnish

1. Heat olive oil in a large stockpot. Add onion, garlic, carrot, and celery. Cook for about 5 minutes, or until lightly browned. Add in green beans, and diced tomatoes. Stir in vegetable broth and water. Add beans, pasta, oregano, and basil. Simmer until vegetables and pasta are tender-about 35 minutes.


2. Season soup with salt and pepper and serve warm. Garnish with parmesan cheese, if desired and serve with crusty bread.
